Easy Slow-cooker Chicken Tacos


This is an easy to prepare meal that is low in fat and high in fiber. I enjoy making them on the weekend because I can do all the heavy lifting in the morning and leave the meal to prepare itself! This is my adaptation of Over the moon’s Cilantro Lime Chicken, that Amelia had shared with me and has become a household favorite.

Combine the following ingredients in your slow cooker:

  • 1 lb boneless, skinless chicken breast
  • 1 can black beans, drained and rinsed
  • 1 can Ro-Tel diced tomato and green chiles
  • 1 bunch fresh cilantro, chopped
  • 2 minced garlic cloves, although I will sometimes substitute garlic powder
  • Salt and Pepper to taste
  • The juice of two large limes
  • 1 bag frozen corn
  • optionally: 1/2 red onion, minced (I do not have an affinity for onion, so I leave that out. They still taste delicious!

Cook on Low for 8 hours; High for 4 hours. When your timer goes off, simply remove the chicken from the slow cooker and shred with two forks. Place the chicken back in the slow cooker for another 10-30 minutes for a fully flavorful chicken taco recipe.

Toppings for your tacos such as diced tomatoes, sour cream, hot sauce, salsa, and shredded lettuce make this recipe a fun create your own meal with family and friends! You will get about 10-12 large soft tacos from this recipe and the tacos are great next day! Enjoy!
