Sunday Morning Frittata

This frittata is easy to make from Saturdays leftovers. The ingredients can vary to what you like or have available.

First off, preheat oven to 400 degrees. Spray a small amount of vegetable cooking spray to coat an oven safe pan (I like to use a cast iron skillet for even cooking.

In a medium bowl whisk five eggs with 1 Tbsp non-fat milk and pour into your pan. Add your ingredients and cook until the edges have set. In this frittata I added leftovers from the grill the night before: rosemary potatoes, zucchini, cheddar cheese, and tomatoes that were not used on burgers! Once the eggs have set, transfer to the oven until cooked through, approximately 10-15 minutes depending on your ingredients. Let cool for five minutes and serve right out of the pan!

Be creative; you can literally add almost any leftovers to this dish for a savory Sunday breakfast!
